چکیده: مهمترین ترکیبات چای متیلگزانتیینها هستند. این گروه شامل کافئین(تئین) به میزان تا 4 درصد و مقادیر کمتری از تئوبرومین و تئوفیلین است. پلیفنلها که تاننها جزء آن هستند، با توجه به سن گیاه و زمان چیدن برگ چای، 20- 10 درصد ترکیبات چای را تشکیل میدهند. تاننهای چای عمدتاً از کاتکول هستند.مهمترین ترکیبات معطر چای شامل ترکیبات الکلی و آلدئیدی منوترپنی مانند لینالول، ژرانیول و بنزیلالکل است. امروزه بیشاز 300 ترکیب معطر چای شناسایی شده است.ترکیب دیگری به نام تئامین(15 اتیلآمیدگلوتامیکاسید) از مواد شاخص موجود در چای است که برای تشخیص مرغوبیت میتواند مورد استفاده قرار گیرد. از ترکیبات دیگر چای میتوان فلاونوئیدها و تریترپنساپونینها، پروتئین، فیبر، قندها، اسید مالیک و اسید اگزالیک، چربیها و ویتامینهای گروه B را نام برد. از دیگر ترکیبات مهم چای فلوراید اثرات ضد پوسیدگی دندان چای، مربوط به آن است.عصاره چای بعلت وجود ترکیبات فلاونولاپیگالوکاتشینگالات، اپیکاتشینگالات، اپیگالوکاتشین و اپیکاتشین اثرات آنتیاکسیدانی قوی از خود نشان میدهد.تحقیقات زیادی خواص دارویی چای را مورد تأیید قرار دادهاند. از جمله مهمترین خواص چای میتوان به اثرات محرک، ضداسهال(قابض) و ادرارآور بودن آن اشاره کرد.اثرات مهم دیگر چای شامل کاهش چربی خون، خواص ضدمیکروبی، خواص ضدپوسیدگیدندان، خاصیت آنتیموتاژن، آنتیاکسیدان، ضدسرطان، و ضدویروس هستند.خواص دیگر چای شامل رفع بدخوابی، رفع تاکیکاردی، کاهش قند خون، کاهش کلسترول خون، کاهش وزن، دفع آب اضافی بدن، تقویت قلب و تحریک گردش خون، و حفاظت از کبد میباشد.چای برای شستشو و رفع خستگی چشم بسیار مفید است و همچنین بهعنوان مرهم مورد استفاده قرار میگیرد.
